The meticulous restoration of the building, using natural materials and typical solutions of the area, has allowed for the preservation of the integrity of the original testimonies and their enhancement in every environment. Furthermore, the furnishings and antique furniture spread the charm of a sober country elegance and the atmosphere of another era.
The same attention has been devoted to the natural components, where native plants such as olive trees, cork oaks, tree species, and shrubs typical of the Mediterranean scrub, as well as various fruit plants from the gardens and numerous aromatic medicinal plants have been integrated. The "stazzo" is an outdoor structure located behind the rooms, where an arch marks the visual separation between the residential and rural areas. The term "stazzo" derives from the Latin "statio," meaning station or resting place, and has been the focal point of rural life for shepherds and farmers for hundreds of years.
Our "stazzo" is equipped with a hearth with a covered area for tables and a large outdoor space that resembles an amphitheater. Here, it is possible to organize events such as theatrical performances, live concerts, folk dances, and private outdoor parties, as well as walk and relax immersed in the nature of the surrounding countryside.
The cuisine of the restaurant at Torre Rossa takes inspiration from the traditional recipes of the Gulf, with a touch of Roman influence and a hint of Naples. It is a simple cuisine, enriched by the creativity of vegetables and the "poor" fish from the sea of Gaeta. The ingredients we use come from our own farm, and those we do not produce ourselves are supplied by local companies that follow organic and integrated production methods, adopting traditional Auruncan recipes.
Each product has a story: the olives and olive oil, authentic protagonists of our territory, come exclusively from the "itrana" variety. For example, our braised meat and Neapolitan ragù are made with selected veal meat, raised and nourished with organic pastures and cereals. The goat milk used for our Marzoline comes from "Cinciare Aurunche" goats, which are left free to graze. Our famous cicerchie beans are strictly from Campodimele, and the lentils are from Ventotene. The "poor" catch includes the typical "paranza" (fried) blue fish, octopus, cuttlefish, squid, and seafood from the Gulf and surrounding coasts. During the season, high-altitude fish such as tuna and swordfish from nearby Ponza also appear.
Our wine selection focuses on native grape varieties such as Uvapane, Abbuoto, Moscato, and Cicinieglio, from producers who use essential and respectful winemaking techniques. These wines breathe new life into the historical products of these lands, such as the famous Cecubo and Formianum.
Welcome! We are Ernesto, Mauro, Fiorella, and Rodrigo. Ours is a captivating family-owned company, where we take pride in sharing the fruits of our labor with a deep respect for the land and nature. Fiorella and Rodrigo take care of the splendid vegetable gardens, orchards, and olive groves, while Mauro and Ernesto focus on hospitality, catering, and service at the Red Tower.
The idea for this company stems from Mauro's desire to live a more authentic life in harmony with nature, leaving behind the beautiful but chaotic capital city and moving from Rome to Itri. Initially, only Fiorella was in charge of direct cultivation, but with the restoration of the ruins and the start of the "Red Tower" project, all family members became involved.
Our philosophy is based on the promotion of local products and the cherished traditions of the region. We have a deep respect for the surrounding nature and, therefore, follow its cycles and preserve its balance. For example, our crops are strictly seasonal, and we only use organic products, including the fertilizer provided by our three adorable donkeys: Ramona, Dora, and Paloma, who also help us keep the surrounding land clean.
With our project, we aim to spread knowledge and flavors of our region, from Roman times to the present day, with all the influences that have enriched us over the centuries. We offer a complete experience that engages all the senses, giving those who stay at the Red Tower the opportunity to live a unique experience in contact with the nature, history, and traditions of our region.
