The Cincinnato Wine Resort is located in Cori, in a nineteenth-century building. An escape from time, in a place of tranquility, in a land of history and traditions. An ideal place for a break among the gentle hills of the Monti Lepini, for a walk among the vineyards, to savor a good glass of wine.
The structure has 15 rooms, 2 mini-apartments, a conference room, Wi-Fi, garden, and patio. You can experience a relaxing and enjoyable stay surrounded by wood, barrels, and natural materials. The spaces are available to customers and guests for private events, ceremonies, and parties.
In Cori and the surrounding area, there are numerous sports activities available: trekking paths, mountain biking, canoeing, paragliding, angel flight, climbing, and horseback rides.
For art and culture lovers, the Cincinnato Wine Resort is the ideal starting point to visit the ancient city of Cori with its national monuments, the Ninfa garden, Sermoneta, Norma, and much more.
Guided tours of the structure are also possible, which will take you through the large barrels and barriques, to understand the techniques and secrets of wine aging and the production of Nero Buono. Starting from the surrounding vineyards of the farmhouse, you descend into the recently built underground cellar, where excellent red wines are refined using traditional Italian techniques. Here, oak barrels house the wine, resting in complete silence for years.
Our delightful breakfast is a variety of genuine local products, carefully prepared by our chef, to start the day in the best possible way. Every morning you can enjoy freshly baked cakes with homemade jams, soft brioches, and typical Corso biscuits, all accompanied by a wide selection of beverages: coffee, hot milk, tea, and fresh fruit juices.
The restaurant at the Cincinnato farmhouse offers a spacious bright dining room, overlooking the vineyards, tastefully furnished with furniture crafted by skilled local artisans. It also has a veranda where you can enjoy meals outdoors on pleasant summer evenings. Our cuisine is based exclusively on local ingredients, such as meats, cured meats, typical cheeses, fresh vegetables picked directly from our garden, homemade pasta, and delicious desserts prepared by our chefs. The restaurant is open on weekends for both farmhouse guests and visitors. Among the typical dishes we offer, you will find: Guitar spaghetti with borage, anchovies, and tomato, Ricotta ravioli with cheese, pepper, walnuts, and mint, Vegetarian roast with pumpkin cream and crispy potatoes, Lamb pulp with broccoli tart and pecorino sauce, Wine sticks, wine donuts, and Coresi tarts.
The Cincinnato winery is considered one of the most fascinating realities in the Lazio landscape, so much so that Gambero Rosso has defined us as a "miracle that happened in Cori" for our rare ability to combine quality with an extremely fair and interesting price.
We are located in Cori, a charming hill town 300 meters above sea level, kissed by the fresh sea breeze from Circeo to the southwest and by the currents from the Lepini Mountains to the northeast. This area is particularly suitable for vine cultivation thanks not only to the climate but also to the soil: volcanic up to an altitude of 300 meters and limestone at higher altitudes.
What makes us unique is our strong connection to the territory, as we exclusively cultivate native grape varieties:
- Nero Buono and Cesanese (red grapes)
- Bellone and Greco (white grapes)
