The Trattoria - The philosophy behind Roberto Viola's (known as BOBO) cuisine, assisted by his mother Giovanna and a team of excellent collaborators, consists of re-proposing the great classic dishes of the Ligurian territory in particular, revised and lightened to make them more refined and digestible. The recipes, handed down from generation to generation, therefore maintain their ancient flavors and simplicity.
The attention to raw materials - in particular mushrooms and fresh pasta - is maximum; in addition to those of the Ligurian tradition, naturally proposed respecting seasonal variations, Roberto Viola loves to accompany the great classics of international cuisine, especially fresh fish and game.
Even the service is characterized by great professionalism and attention from Luca Viola, without however losing the characteristic warm and informal imprint that has always distinguished the Trattoria Piemontese.
