In the courtyard of San Giorgio, we often pause to tell and listen to fascinating stories. Even food has its own tales to tell.
In our kitchen, furnished with reclaimed objects, you will find one of the ancient wooden credenzas that holds marvelous stories. These stories narrate the great and ancient dream of the land: to give wheat. While the wheat, caressed by the wind, bestows golden smiles, it dreams of being harvested by skillful hands, those of the "artists" who know how to transform it into artisanal pasta.
The wheat, coming from Italian lands and processed by the master pasta makers of Salento, becomes the pasta of San Giorgio's courtyard, served on our tables and also a souvenir to take home.
On each package, you will find a sentence that tells a story within the story, that of the courtyard, its dreams, and its philosophy. We want to be, thanks to the wheat, storytellers who carry on ancient traditions!
The Salento dishes we offer our guests bring to the table the tradition of Salento, just like our pasta.
We follow and listen to the season, using vegetables and fruits that come directly from the synergistic garden and trees, and the oil, whose fragrance is anticipated by the sight of the olive trees surrounding the courtyard.
The recipes we use are those "secret" ones handed down by grandmothers, whose scent awakens memories and tells once again the story of a land rich in vegetables and wild herbs, the story of a poor and genuine cuisine, with unrefined flours and barley.
Alongside classic seasonal dishes such as ciceri e tria, fava beans and chicory, and lamb rolls, we don't forget to serve horse meat as well. Once widespread because horses were used for work in the fields and only became a valuable and energetic food when they were old.
During winter, to warm up lunches and dinners, there is our Lecce stone fireplace, which, when lit, spreads a familiar warmth. In summer, to welcome friends, there is our porch overlooking the olive grove, where you can also sit for an aperitif, enjoying a typical Salento wine, of course!
