Each breakfast, lunch, or dinner is a farm-to-table experience: many of the ingredients you will enjoy come directly from our garden and fields, freshly harvested to provide you with the authenticity of "picked and eaten."
When we lack something, we turn to local producers who share our philosophy. The wine, cheese, honey, and other products come from nearby businesses, often just a short distance away. Our menu changes based on ingredient availability, meaning that if it’s not there, you simply won’t find it. Today, we have chosen to take a step back in order to move forward with greater awareness. Our home is heated with a biomass system, utilizing natural resources in a sustainable way. Waste from the fields and kitchen is converted into compost, giving life back to the earth. We only use biodegradable detergents and Marseille soap for laundry, which we dry in the sun just like in the old days.
Our decision not to use fertilizers or chemical products for our plants reflects our commitment to authentic nature. An apple here is truly an apple: simple, genuine, and capable of being appreciated by those who look beyond the surface, recognizing the true essence of things.
